Sweet Potato Stew
Experience Level: Very Easy
(makes 2 large bowls, preparation 10 minutes, cooking time 30 minutes)
1 large sweet potato
2 medium carrots
1 medium or large onion
2-3 sticks of celery (or more to taste)
3 medium tomatoes
1 teaspoon ground cumin
1 teaspoon ground coriander seed
1/8 or 1/4 teaspoon of chilli powder (or more if you like it spicy)
In a large pot put 1 tablespoon of water in the base and put it on to heat.
Prepare the vegetables by peeling and then cutting them into chunks trying to keep them the same size. The larger the chunks the longer it will take to cook.
When the pot is hot put all the vegetables and spices in to cook giving them a good stir. Leave to cook on medium heat for approximately 30 minutes. The meal is cooked when the sweet potato pieces are soft and easily cut in half.
